Day 26

Saturday we were blessed by my grandparents opening up their home for an annual Trick or Treating event in their neighborhood. I love creating these special memories with my son and my nieces and nephews.

Day 27

I am so thankful for Sunday naps! Sunday’s is actually a really busy day for our family. We only have a couple hours at home between morning and evening service, so I love the Sunday’s that I can actually sleep for just a little bit. Usually a 15 minute nap is sufficient, but I am sure I took a longer one yesterday. It was much needed!

Day 28

family park pictureToday I am blessed with a sunshiny day that is much warmer than it was last week! I’m looking forward to taking advantage of this slightly “warmer” weather to finish some yard work that I am much behind on finishing.

I also had a chance to talk with yet another adoption agency today, and while it’s not for sure yet, it looks like a strong possibility for us to work with them for our second adoption. Please pray for us as we seek the Lord and His timing as we desire to grow our little family!

Last night we had the blessing of hosting a few out of town guests overnight, giving us an opportunity to utilize the bunk beds that were given to us a couple weeks ago! I’m so thankful for the extra rooms God has provided for us so we can easily accommodate guests.

365 Days of Blessings: Day 23 & 24

I had to put these two days together because they have felt like they have run together.

This week has been busy in that I’ve had a lot that absolutely needed to get done. But I’ve also had a cold, so I haven’t slept well and I have really been dragging throughout the day.

Yet, I am so thankful for a God that has sustained me. Psalm 3:5 says, “I lay down and slept; I woke again, for the LORD sustained me” (ESV), and Psalm 54:4 says, “Surely God is my help; the LORD is the one who sustains me” (NIV).

These verses really describe how I have gotten through the last two or three days. Even though I’ve not slept well at night, when I do wake in the morning, I have just the right amount of strength to accomplish my tasks. And when I take a very much needed nap in the afternoon, that 15 minutes of sleep recharges me to get through until the evening.

What a comfort and blessing to know that God cares enough about me to sustain me and give me just the right amount of energy I need to get me through my day!

365 Days of Blessings: Day 19-22

Day 19

Saturday I was blessed with a  fun family adventure day. It started with meeting my sister to get some more family pictures taken. She took so many good ones, but I’ll just share one!

Then we went to the Apple Orchard, where my son loved running through the rows of apples. And apparently he is already “too big” to give his mom hugs in public!

Having missed his morning nap, my son wasn’t as energetic playing at the orchard – or so I thought. On the way home he ended up puking and I felt so bad for dragging him out when he wasn’t feeling so well.

Day 20

Sunday I spent a quiet day at home with my sick little boy. Ever since we brought him home from the hospital as a newborn, I have read to him every day. He loves reading, so we spent a good chunk of the morning reading books. And yes, we read ALL of these and probably more!

Day 21

Monday I was blessed with a productive morning. I just love when days start like that, especially a Monday because it seems to set the tone for the week.

Another Monday blessing was taking a trip to Target where I was able to get a mixed bag of fruit, frozen green beans, and fresh spinach for just $0.62 after Target Mobile Coupons.

Day 22

Today I am so thankful for a day at home. We have no plans or errands to run. I’m excited to be home and just get housework done.

365 Days of Blessings – Day 18 (Blessed Even When…)

When I first started the “365 Days of Blessings” at the beginning of this month, I had said that there are times that it is difficult to be thankful. And it’s true that there are days I just want to cry. Yet God calls us to be thankful even when life is difficult, even when things aren’t going the way we want or how we planned them to go.

This week yet another adoption agency told us that they were not accepting new waiting families until next September. My heart broke. I want to already be on a waiting list, at the least, but here we are still trying to find an agency to even work with us.

I have followed every agency lead that I get. I have poured so much time and energy into the research and inquiries. After another “no”, I felt completely defeated.

I cried to my husband saying, “What does God even want from me? What is He trying to teach me? I just can’t handle this anymore. What more am I suppose to do?”

Oh, how I wish things came a bit easier for us. Sometimes I tell people, “I just wish a baby would drop into our laps one day.”

But if life were easier, I wouldn’t be reminded that God’s “grace is sufficient” for me! That even when I think I can’t handle another let down, He gives me the strength to carry on.

If life were easier, I wouldn’t be reminded to “Trust in the LORD with all (my) heart” and to not “lean on (my) own understanding” (Proverbs 3:5). Because even though I don’t understand why, God does. He sees the whole finished picture, and that picture is far better than I could have ever imagined.

I’m also reminded that this struggle of mine is so much smaller than a struggle someone else has. And for that I need to be thankful!

So even when things don’t go how I want them to go, even when I feel discouraged, even when I don’t know what step to take next, I am blessed.

I am blessed because I know a God who loves me and care enough about me to say “yes” in HIS time.

I am blessed to have a precious son to love on, to play with, to cuddle with, to read to.

I am blessed to know so many people that are praying for my little family as we wait for God’s timing to make it just a little bigger.

There is always, always, ALWAYS, something to be thankful for!

The last few weeks I have created menu plans, and then somehow they have all gotten thrown away after I finished grocery shopping. Probably since I wrote it on my grocery list. Sadly, I never wrote my menu plan on my calendar, and then I’m left trying to remember what we were suppose to have.

So this week I thought I’d start sharing my Dinner Plan’s with you…that way if I don’t get it written on my calendar, and my list gets thrown away, it’s at least here, right?

365 Days of Blessings: Day 15-17 (Bedtime Kisses, Shelter and Heat)

Day 15

Oh the sweet blessings of bedtime! I love the precious moments before I put my son into his crib. Every night, as soon as I put his bedtime music on, he puts his little head on my shoulder and wraps his arms around my neck. I stand by his crib, rocking him for a few minutes and praying with him. As soon as I say “Amen”, he lifts his little head and gives me a precious kiss on the lips. Sometimes he then turns toward his crib, ready to go down, and other nights he puts his head back on my shoulder wanting to be held a little longer. All the while, he will continue to occasionally lift his head to give me another kiss, trying to buy more cuddle time with me. Although I do admit, it often works! Oh how I savor these precious moments with my son.

Day 16

Yesterday was our first truly cool, rainy and windy day here. And even though we toughed it out, trying not to turn on our heat yet, I couldn’t help but be blessed that we have shelter over our heads. I was blessed with the ability to turn on the oven and make some banana bread in attempts to warm up our house a little bit.

Day 17

Today I am blessed with heat to warm up our house. Last night my husband and I caved (or really I caved) and turned on the heat in our home. Our house only warmed to 66 degrees yesterday, and while some people may think that’s the perfect temperature, it’s a little cool for me. If I knew that was as low as it would get, I could have probably handled it, but I knew it would get even cooler overnight. Today is another cool, rainy day and I knew our home would just get cooler. So I am incredibly thankful for heat and a warm house today!!

BLT Grilled Cheese

I love BLT’s…minus the “t” that is. I’m not such a huge tomato fan. But my husband likes  them. Every once in awhile I will throw out the suggestion that we should have BLT’s for dinner. Each time my husband wrinkled his nose at the idea, so I’ve never made them.

Until recently.

My husband loves grilled cheese. If I suggest it for lunch, or even when we need a quick dinner, he will never turn it down. Since we’ve had lots of fresh tomatoes from our garden recently, I decided to make BLT Grilled Cheese for dinner one night.

The result? Huge hit! My husband keeps asking for them. This is definitely going to be a regular in our house.

BLT Grilled Cheese

  • 8 slices of bread (I used honey wheat)
  • 8 slices of bacon
  • 8 slices Swiss cheese (or whatever you like)
  • 1-2 cups fresh spinach
  • 1 large tomato, sliced
  • 1 T butter
  • 1 T mayonnaise

Directions

  1. Spread a small amount of butter and mayonnaise on the outside of each bread slice.
  2. Layer sandwiches with bread slice, cheese, tomato, two slices of bacon (cut in half), a small pile of spinach (it will cook down some) then another slice of cheese. Top with remaining slice of bread.
  3. Place sandwiches onto a skillet or griddle. Cook slowly over low heat until each side is slightly brown and the cheese is melted.

Serve with fresh fruit and veggies.

365 Days of Blessings: Day 10-13

Day 10

As Thursday’s is typically my grocery shopping day, I am so thankful that I have grocery stores just five minutes away from me! My favorite store would be Aldi, but we also have a few more to choose from. Growing up, for the longest time the nearest Aldi was about 45 minutes away. My mom would make her list and shop for the entire month. When my husband and I first got married, we only had one good grocery store in our town. We now have four. We are so blessed with the convenience!

Day 11

imageFriday we were blessed with a fun outdoors day! My son and I met my sister and niece at a local Nature Center where saw turtles, frogs, fish and (much to my dismay) snakes. We enjoyed a picnic lunch and playing at the Nature Center’s outdoor “park”. I love making these precious memories.

Day 12

I love spending Saturday’s with family. This week we ventured into the city, meeeting one of my husband’s co-workers and getting some family pictures taken. I also ate at a Medaterranian Restaurant for the first time!

When we came home, my husband put together a bunkbed that a friend gave to us. We are now praying that God would provide little ones to fill the extra beds!

Day 13

Sunday our church celebrated its 62nd Anniversary, the founding pastor (my grandfather) is still pastoring and preaching today. We are blessed with a church that teaches the Word of God and wants to see people grow in their walk with the Lord.

Day 14

Today I am blessed with life! This morning my husband woke up to messages from friends saying that a guy he went to high school with passed away. It’s a reminder to live each day to the fullest, to not take for granted the people we do have in our life, because we don’t know what tomorrow will bring.
