What do you think is the hardest thing about being on a “diet”? I think often we tend to focus on the things we can’t have instead of remembering what we can have. We also view it as “diet” instead of seeing it as a “life style change”.

Thursday my family began Week 2 of a Gluten Free diet. Well, most of us anyway! I bought bread for my son’s lunches. Having a gluten-free diet means saying “no” to a lot of foods. But there are still so many that I can have.

While I can’t speak for my husband, I have done quite well not thinking about it. Don’t get me wrong.  It truly is a discipline to be at a party and have to pass by the yummy pasta and load the plate up with a salad instead. It’s not easy to refrain from taking a bite of my son’s sandwich that he didn’t finish. After all, I don’t want it to go to waste, right?

This Friday was a hard day because I wanted something quick, but my fruits and veggies weren’t washed and cut up yet. I was so incredibly tempted to make a peanut butter and jelly sandwich. But I practiced discipline and sliced up a little cheese to go along with  an apple with peanut butter on it.

When faced with these challenges I have to remind myself that I am making this lifestyle change to improve my health. And really, I need more fruits and vegetables in my diet, so it’s good if I load up on those a bit more. As the Little Engine that Could would say, “I think I can, I think I can, I think I can….”

Adoption Update: Let the Waiting Begin

Well friends, it’s been three months since I shared our last adoption update. Three really incredibly busy, non-stop months with illness, Christmas, birthdays, more illness, ministry, vacation, and a crazy every day life.

Finally, I am happy to share that we have officially submitted our adoption application for Domestic Infant Adoption.

And now the wait begins. A really LONG wait.

You see, normally, once an application is submitted, an agency will review it and then begin the home study process. Within a few months our profile would be ready for expectant mothers to view.

Sadly, this is not the case for us right now.

When we decided we wanted to start our second adoption, I contacted several agencies. All of them said, “We have too many waiting families and aren’t taking anymore until babies are placed with them.”

We finally found an agency that would take an application. With one hitch. They were in the same boat as other agencies. However, by completing a full application, we would be put in a pool that they would draw from when spots opened up. Unfortunately, they said it would be 6 to 18 months before we might officially be accepted.

What do you do while you wait?

Waiting for You Adoption

That’s a great question! Thanks for asking:-) There are actually several things we will be doing.

1.  Pray!

We’re praying for guidance and direction as we seek to grow our family. In December I shared “Praying for our Waiting Adoptive Family”. These are ways that we are praying and ask you to join us. I cannot begin to tell you how encouraging it is to know that people are praying for our family.

2.  Work on our Profile.

To the best of my ability, I am going to update our current profile so that it’s ready to print and give to the agency when the time comes.

3.  Earn money.

Adoptions are expensive. Honestly, our first one wasn’t all that bad. However, agency fees have gone up, and the agency we currently applied with are more expensive than the one we had with our first son. So I am going to look for ways to earn money (and save money from our budget) to help fund our next adoption.

4.  Advertise ourselves.

We are really in the discovery stage of this one. When we met with our agency, they said that a lot of the families are connecting with birthmothers outside of the agency. Right now I’m really not sure what we are going to do to maybe help us connect with an expectant mother without an agency, but I’ll be sharing ways once we figure this all out.

P.S. Please keep us in mind when you hear of someone expecting that may be considering adoption!

5.  Seek new opportunities.

This is one we are really praying over for guidance and direction.

The first opportunity is foster care. So many children need a stable, loving home. By opening our home to foster care, we have a unique opportunity to share the love of Jesus to children who may not hear it otherwise. The agency we are looking at has an orientation information meeting once a month. Each month we have had something big going on that couldn’t be changed and have been unable to make the meeting. After five months of this not working out, I don’t know if we should look into a different agency, or if this is not the direction God wants us to go right now.

The second opportunity is through a Kidsave program. We first heard of Kidsave when we went to the information meeting for our adoption agency in November. It peaked our curiosity immediately. Through Kidsave, we would host at least one child (and possibly a sibling group) from Columbia for four weeks in the Summer. During these four weeks we would be an advocate for the child we host, providing a loving environment for them, sharing our culture with them, and obtaining medical care if needed. The ultimate goal of Kidsave is that we would choose to adopt our host child or connect with someone else who would be willing.

The Kidsave opportunity would be a huge undertaking and commitment with our time, as well as with our money, especially if we choose to adopt. In addition, by going this route, the child we would adopt would most likely be between the ages of 10 and 13. Since we still want to pursue domestic infant adoption, I’m really not sure how this will all work. We are praying that God would make clear His will for us.

Right now I don’t know what the future for our family will look like. What I do know is that our God is a faithful God. He knows what our future holds. His timing is always perfect. And He is good. As the Psalmist says,

“I am confident of this: I will see the goodness of the Lord…Wait for the Lord; be strong and take heart and wait for the Lord.” (Psalm 27:13,14)

365 Days of Blessings: Days 141-168

Do you ever wonder when life will slow down for just a little bit? Yet somehow it seems to get busier and busier. These last few months, and especially the last few weeks have really felt like that. Each day is full of decisions, deciding which things on my list are priorities. My family and my home come first, so here I am again catching up here with my blessings!

The Blessing of Hospitality

This blessing comes in a few ways, and I have had the wonderful opportunity to share and receive this blessing several times these last few weeks. A great way to receive a blessing is to be a blessing to other people. Somehow I always feel more blessed by doing something for someone else!

Once again we have had the blessing to host a ministry team that came to help with a youth event at our church. It’s always a blessing to spend time hearing how God is using other people to serve Him, and I love hearing the stories of how God is working in each person’s life.

Another blessing of hospitality is through cooking. As we had guests over, I had the opportunity to make meals for them. In the last few weeks I have also had the blessing to bring meals to different people. I am so thankful my mom took the time to teach me how to cook when I was younger, and also for the example she set in serving other people.

Hospitality also extends outside the home. In the past few weeks I have had the pleasure of making meals for people and bringing it to their home.  One was for my aunt andis for uncle who moved into a new home, and the other was for a friend who just had a baby. Having been on the receiving end of meals for these big life events, I know what a blessing this form of hospitality is.

 The Blessing of Family Time

This blessing really deserves its own post (and maybe I will give it one). But in a nutshell, we took our first family vacation…the first real vacation my husband and I have had in almost seven years. We didn’t think the trip would happen, but it all seemed to fall into place.

This was one fantastic week. It was so nice to get out of the frozen tundra that we’ve had and travel south to the warmth of the sun in Florida. Prior to the vacation, my husband had been working some really long hours. This extra family time was greatly needed.

Not only was the family time needed, but time away from home and normal responsibilities. My husband left his work laptop at home. For the most part, my laptop stayed closed. We mostly used our computers to watch Curious George with our son.

To top the week off, we were able to spend time with my youngest brother. Lucky for him he doesn’t have to deal with our frozen tundra at all because he lives in Florida! We stayed with him in his apartment, and in turn he received some home cooked meals.

Overall, we came home feeling reenergized and refreshed from our trip and are so glad we were able to finally take a vacation.

Birthday Blessings

While we were in Florida, my mom had a birthday. My mom is such a blessing to our family. She is the definition of a “servant’s heart”. She is always looking to the needs of other people and ministering to someone. My son absolutely adores his “Gamma”. Whenever we ask him where we are going, his answer is always “Gamma’s”.

This past Saturday my sister hosted a birthday party for my mom. What a blessing it was to spend time with our family!

The Blessing of Sunshine

As this has been one terribly long winter, we have not had much sun. I think we are all feeling the effects of that. This past week we’ve had a few sunny days though and it has been so nice. I love opening up all the curtains and blinds and feeling the warmth of the sun in my home. Today the temperatures are creeping up into the 50’s, so we may even be able to go for a walk outside…especially since the snow melted from the sidewalks.

Double Chocolate Banana Bread

 

Chocolate Banana Bread

Banana Bread is a favorite in our house. And not just regular banana bread, but chocolate chip banana bread. After all, chocolate makes everything taste so much better!

One of my favorite ingredients to put in banana bread is instant vanilla pudding. One day I went to make banana bread, but I didn’t having any vanilla pudding left. Just chocolate pudding. Hmmmm?!?! We like banana bread. We like chocolate. How about some chocolate banana bread?

I admit, I was a bit leery of what the final product would taste like. However, I was not disappointed. This banana bread turned out absolutely amazing. Everyone who tasted it loved it. So just try it! It will just melt in your mouth.

Double Chocolate Banana Bread


1 cup butter, melted

1 cup sugar

2 eggs

1/4 cup cocoa powder

1 3.4 oz packet instant chocolate pudding

3 to 4 ripe bananas

1 3/4 cup flour

1 tsp baking soda

1 cup semi-sweet chocolate chips

Directions

1.  Preheat oven to 350 degrees. Grease a loaf pan.

2. Combine butter and sugar. Mix well. Add eggs, cocoa powder and chocolate pudding. Mix until well blended.  Mash bananas and mix into batter. Stir flour and baking soda into mixture. Blend well. Fold the chocolate chips into the batter.

3.  Bake for 50-55 minutes, until toothpick in center comes out clean.

In the last few months I’ve had my share of challenges when it comes to meal planning. Whether it be putting a meal plan together with only $12 of grocery money left for the month, or trying a dairy-free menu for a month.

This month’s challenge is a gluten-free meal plan. And actually it will be a challenge that will last longer than a month.

So why am I challenging myself with this? For my health!

No, I don’t have celiac, nor does anyone in my home. However, gluten is a trigger for my endometriosis, so I want to eliminate it to see how much it helps me. A couple years ago I made this change for about six months. Not only did my pain drastically reduce, but my energy level increased.

For the past few months, I have talked about this challenge with my husband, and thankfully, he is on board and wants to join me in this change. The hardest meal to change will be our Friday Night Pizza Nights! (Yes, I know there are gluten-free pizza crust options, but I don’t buy special flours to use…so for now, no pizza).

I am so looking forward to some creative gluten-free meal plans these next coming weeks and months. Here’s our first gluten-free meal plan…

What’s For Dinner…? #15

What' for Dinner

These last few weeks have been busy, busy, busy. Do you ever wonder when things will slow down? I’m fairly confident that life will keep getting busier, and that okay. I’m learning to embrace the craziness instead of letting it pull me down.

So what have I been busy with? A little bit of everything, but mostly cooking. I feel like my life has revolved around the kitchen the last couple weeks. The cooking I love, it’s the cleanup that’s not so great!

Last weekend, in addition to having guests in our home, we had an all day youth event for our teens at church. Somehow I was able to prepare all the food for the event plus our family meals, despite the fact that my son chose those days to pull everything out of cabinets, break one of my favorite serving bowls and dump baking soda all over the kitchen floor (just to name a few).

Whew! I’m so glad this week was a semi-normal cooking week.

Twice in the past week I have had the opportunity to make a meal for people. The first one was for my aunt and uncle who just moved into a new home, and the second meal I brought to a friend who had a baby. It is such a blessing to be able to serve others!

Now that it’s starting to get back to a normal busy in my home, here is this week’s meal plan…

Embracing a New Normal

Embracing a New Normal

For those who know me, you know that I’m an organized, planned person. I like to know the details. I want to be as prepared as I can be for whatever is coming. I thrive on routine.

Yet this past year I have struggled to find balance in my life and time to get things done. I  found myself longing for normal.

Let me start at the beginning.

Last March my husband came home from work one day saying that we were going to look at a house with my cousin, who is a realtor. I didn’t know we were in the market for a new home. Yes, our home was quaint. But it worked for us…unless we invited more than a handful of guests over that is. Then it just got crowded cozy.

Even as we looked at houses, I had it in my head that we probably wouldn’t be moving until the end of Summer. It would give me time to prepare mentally for a move. It would give us time to prepare our current home to be a rental property.

By April we had found the perfect home for us. The home we would want to grow our family in. The home that would allow us to entertain more than two guests at a time more regularly and comfortably.

Our closing date for our new home was June 3rd. It really couldn’t have come at a worse time. The Summer is actually the busiest for us. Between kids Vacation Bible School, teen Vacation Bible School and Teen Camp, the Summer is a lot of work. All of it takes a lot of time and energy for me.

So began the whirlwind of craziness.

Packing. Cleaning. Patching holes. Painting. Moving. Unpacking. Settling. I just wanted to feel settled. I wanted normal.

In the midst of all of this, my mother-in-law’s health was drastically failing. She had not been well for over a year, but we had hope that she would eventually recover. But last Summer she only got worse. Unfortunately, my husband’s family lives 6 1/2 hours away and we had a few unplanned trips to visit her. During one of them she passed away.

By this time, the Summer was half over and we were preparing for our Teen Camp, which for us kind of signals the end of Summer, the end of Summer break anyway, as the students go back to school shortly after camp.

Oh how I longed for normal. I longed for routine. Even though I don’t have school aged children, I longed for school to start because the start of school screams normalcy, right?

And then I got sick. I was fine one minute and doubled over in extreme pain the next. A trip to the ER, an unplanned surgery and five days in the hospital carried us into September. It took almost four weeks until I was back to full strength, and all “normalcy” was out the window.

Before I knew it, the holidays were upon us, and let’s face it, schedules are crazy during the holidays. Each year I tell myself, “Once the new year begins, things will settle down.” But really, they don’t. Each year simply gets busier. Just this past week, I spent long days shopping for food and supplies for a teen event, as well as cooking for the event and normal meals for my family. In addition, I brought a meal to a family member that just moved and prepared our home for out-of-town guests. Today is a day full of cleaning as I pull my house into order.

I may be a bit of a slow learner when it comes to this area, but it finally hit me that this crazy life of mine is normal. We’re always going to be finishing one big thing and be moving on to the next. If it’s not moving, or VBS, or camp, or poor health, it’s going to be something else. It’s not going to get easier. Our schedule is going to keep getting crazier.

I have learned so much this past year. I’ve been stretched probably more than I really wanted. Instead of choosing to be burdened by my crazy life, I am slowly learning to embrace my “new normal”. Here are a few things that have helped me:

1. Be Flexible

This is a hard one for me, especially since I love an orderly schedule. Through my 7 years of marriage, I have slowly learned to roll with the punches.  My husband is not a planner. He does a lot that is last minute, even planning a last minute trip because he sees a window of opportunity to take off work.

The events of this last year have really put flexibility to the test for me. I realize that not all of life can be planned, but there’s a lot of good things I’d miss out on if I’m not flexible. It’s better if I accept and embrace whatever comes my way rather than wallow in self-pity of having a disruptive schedule.

2. Know the Important “Stuff” in Your Routine

When life gets crazier than a “normal” crazy routine, it’s important to know what needs to stay as normal as possible and what can get juggled around.

For instance, I have a specific cleaning schedule that I follow that helps me keep an orderly home. Yet, there are some times when this schedule gets shifted (or totally thrown out the window) for certain things. Last December my son was really sick for about a week. Not much cleaning got done, but I spent a lot of time on the couch holding my sweet boy. That’s what he needed the most. Sometimes cleaning gets put by the wayside so that we can say “yes” to something that will create a memory, like going to the zoo or children’s museum.

Then there are a few things that are a must for me no matter what. First, my time with the Lord is a must. I wouldn’t be able to handle the twist and turns of life without it. Second, certain routines with my son need to stay the same – no matter where we are or what we are doing. His mealtimes remain consistent every day. He still needs an afternoon nap, and we always take time to read before naptime and bedtime. For the most part, he goes to bed at a certain too, though.

3.  Ask for Help

Once again, this is a hard one for me. I don’t want to put my burden or responsibilities on someone else. However, there are times when I’ve had to call someone to teach my Sunday school class because I simply didn’t have the time to put together my lesson. And let’s all face it, sometimes it’s easier to get some things done when you don’t have a little one underfoot. It’s okay to ask someone to come help watch your kids. My mom loves her one-on-one time with my Gavin, and my sister is more than willing to spend time with him as well.

4.  Look for the Blessings in the Midst of the Crazy and Chaos

It is so easy to get burdened and weighed down by life. It’s easy to get overwhelmed by all the things that need to get done. Some of the things – okay many of the things – that happened this past year have not been easy. I think I’m still recovering from moving! But moving to a new home as opened a door for new opportunities for my family to minister to others.

My health was not fun, and I got absolutely nothing done, but it gave me much needed time to rest in the Lord. Blessing!

Opening our home to out-of-town guests can create a little extra work, but the blessing of hospitality is such a great reward.

My husband’s last minute weekend getaway gave us some much needed time with just the two of and left us reenergized and recharged for the events coming up.

Having a positive outlook in the midst of crazy helps me keep my sanity. And there is always, always, always something to be thankful for!

365 Days of Blessings: Days 124-140 Highlights

It’s been a couple weeks since I shared my blessings. I haven’t forgotten, and we most definitely have had blessings. My time on the computer has simply been limited. By the time I have a chance to sit down at night, I’m exhausted and my brain is fried.

So, to the best of my remembering ability, today I will share with you an overview of my blessings from the last couple weeks.

Blessings of Motherhood

One of the biggest blessings I have is sharing my days with my favorite little man. We get to color, build blocks, shoot “hoops” and so much more.

Toddler Crafts

I love bringing my Gavin alongside of me while I work around the house. Really, it’s the only way I get things done, but it never ceases to amaze me how much he learns. Whenever I have the dishwasher open, he runs from wherever he is to “help” me unload (though sometimes the dishes are dirty and I need him to “help” me keep them in the dishwasher). I laugh every time he takes a dish and tries to dump the excess water off of it over the kitchen sink – just like he sees me do.

Kitchen Helper

Sure, it takes a little more work to have him join me as I clean the house and prepare meals, but I think it’s important for kids to learn to work while they are young. My son learns so much by working alongside me. And the extra hugs, the little kisses, the laughter is all worth it.

A Weekend Getaway

My husband and I celebrated our 7th Wedding Anniversary the end of January. As a gift, my husband worked out the details for us to getaway for a couple days, just the two of us. We stayed just 20 minutes away from where we live, and I’m so glad we did. No time was wasted traveling in our precious two day retreat!

I admit, it was hard leaving our son. It was the first time I willingly left him overnight anywhere. (The first time was last September when I was in the hospital for 5 days). But the time with my husband was much needed and well worth it. We both came home from our “getaway” so relaxed and refreshed.

Disney on Ice

My family had the blessing of receiving four free tickets to see Disney on Ice this month. The best part is they were third row seats. How great is that!

Since our son would be free, we asked my nieces to join us. We were super excited. They showed up at my house dressed liked princesses and ready to go. I am so glad I had them to enjoy the show with. Gavin lost all interest after the first 10 minutes, and my husband actually ended up in the hall with him after intermission.

Accomplishing Projects

This last week I have been determined to accomplish little projects that I have wanted to get done, but either time or little obstacles have kept me from completing them.

Saturday I had a rare, calm day at home. My husband left late afternoon to go to a college basketball game, which made supper time a little simpler, and Gavin was playing really well and was in great spirits, so I took advantage of this time.

I pulled out the drill and started hanging shelves, a key & mail holder organizer, and pictures.

Though these tasks seem so simple, something always goes a little wrong for me. Even today as I was attempting some of the tasks, I thought to myself, “Maybe I should just hire someone to do this. It really should not take this long.” After all, time is money, right? But then again, I was trying to keep my little guy from drilling unwanted holes in the wall – so I have to give myself a little credit.

My favorite accomplishment was finally hanging these Ikea spice racks turned bookshelves in my sons room.

I thought they turned out great! His room just needs a couple more small projects done that I hope to finish sometime soon.

Next on my project list, I hope to finish our adoption application and get it submitted!

Meat & Cheese Stuffed Shells

This past Valentine’s Day I wanted to make something special for dinner for my husband. Typically, I make Raspberry Chicken for our Valentine Dinner, but I had recently made that. I needed to figure something else out.

Stuffed Shells is THE dish my husband asks for on his birthday. However, his birthday is just a couple days after Christmas and we usually have a lot going on with family being in town. So the last few years we have gone out for dinner on his birthday, and the stuffed shells never got made.

This year I decided that Stuffed Shells would be the perfect Valentine’s dinner. And it was. My husband was so appreciative I took the time to make this meal for him.

We love this recipe for two reasons. First, it has meat. Most (if not all) stuffed shell recipes I see are filled with ricotta cheese. Which brings me to the second reason. I use cottage cheese instead of ricotta.

I know, I know. Don’t hate me all you ricotta cheese lovers. It’s just not our favorite. And actually my husband really doesn’t like it. The cottage cheese just brings a nice, creamy texture to the dish though. So don’t knock it until you try it!

(And for all you dairy-free people, simply omit the cheese all together and add a little sauce to the meat).

Meat & Cheese Stuffed Shells

  • 12 oz box of Jumbo pasta shells
  • 1 lb lean ground beef
  • 1/2 lb ground Italian sausage
  • 2 cups cottage cheese
  • 2 cups shredded mozzarella cheese, divided
  • 2 24 oz jars of spaghetti sauce
  • salt and pepper

Directions

  1. On the stove, bring a large pot of water to boil. Add jumbo shells and cook for about 8 minutes until shells are tender. Drain water. I then like to rinse shells in cold water to keep them from sticking and make them cool enough to handle.
  2. In a large skillet, brown ground beef and italian sausage until no longer pink in the middle.
  3. In a large bowl, combine 1 cup of mozzarella cheese, 2 cups spaghetti sauce, 2 cups of cottage cheese and browned meat. Mix until fully blended. Add salt and pepper to taste.
  4. In a 9 x 13 baking dish, spread 1 cups of spaghetti sauce on the bottom. Fill each shell with about 2 tablespoons of meat mixture. Be sure not to overstuff them. Spoon 2 cups of tomato sauce over the stuffed shells and sprinkle with remaining 1 cup of cheese.
  5. Bake at 350 degrees for 30 minutes, until the shells are heated through and cheese is a bubbling golden brown. Serve with extra spaghetti sauce.
